Beers From Here, our partnership with Triangle Land Conservancy fueled our creativity and refined our approach to working with ingredients that grow wildly in our region. We set out with the goal of making one beer this fall utilizing ingredients foraged from forests and fields of the Triangle, we ended up making three.

This week we will debut our official Beers From Here brew, Unconditional Skies, a Grisette bittered with Juniper and Rose hip and fermented with Maypops, our native Passion flower fruit. Join us next Saturday at TLC’s Irvin Nature Perserve, 10 minutes from the brewery, for a banquet celebrating this project, featuring 4 unique forage inspired beverages and a meal provided by some incredible local chefs. Blue Laurie, is an oak aged Saison (single culture, brett anomala) that rested on 500 pounds of NC blueberries after spending 6 months in Sauvignon Blanc barrels and shows some of the funkier brett characteristics we’ve ever bottled along with, of course, big blueberry notes.

Myth of Fingerprints is a mixed culture saison (pitched with saison yeast, brett, and souring bugs) that was aged only in stainless for 6 weeks with persimmons we foraged up in Reidsville. Lots of stonefruit, like cherry and apricot and a touch of acidity.

Two totally different expressions of “sour” beer.

There have been few moments in our 4 and 1/2 year history when we have filled all our taps with our own beer. Brewing on a relatively tiny 7bbl system and putting more beer than ever out in package, it’s often been a struggle to keep the taproom stocked. Will and Heath have been brewing like crazy to make sure we have a top notch selection of beers that represent the breadth of what we make, and something to suit every type of beer drinker. We love offering fruited mixed culture ales next to traditional German Altbier, or our unique Picklemania dill Gose and of course Big Mon IPA. Something challenging and new next to something comforting and classic. Two funky and fruity beers drop in bottles this week! Today we release Myth of Fingerprints, a mixed culture Saison refermented on foraged persimmons. Myth of Fingerprints has been available on tap for a few weeks now, now you can bring it home with you.

The second beer is Blue Laurie, our white wine barrel aged Brett Saison refermented on heaps of NC blueberries. We’ll put this beer on tap and in the fridge closer to the weekend, as our taps are bursting at the seams at the moment. Blue Laurie is a beautifully complex beer marrying white wine and tannic oak flavors with blueberry acidity and a deep Brett funk.
These beers represent different ends of the spectrum of what is possible with fresh fruit and Brett cultures. #ncbeer #craftbeer #brettanomyces #saison #mixedculture #bottlerelease
